is anybody familiar with hissing coming from the tensioner in this machine? Is this normal?

Sounds as if you have an air leak. This is a pneumatic machine that relies on air pressure. I think Tennismachines Inc. services them.

If you only hear the hissing when the tensioner is moving, I don't think that is a problem.

Yes, of course you can. The issue is tension consistency. If you have a way to check your final tension<string meter for example> and your results don't vary, it will work until it breaks. Remember, all machine will need to be serviced or replaced, & the P_200 is not a youngster.

Can you listen to see where the hissing is coming from? Is it from the air tank (cannister), or up near the tension head itself (in a valve)?

Do a soap bubble test on all the air joints. Apply a small amount of soapy water to each union and look for bubble formation. That will tell you if it is leaking from a place it shouldn't be leaking from - or if the air is escaping from the system as part of normal ops.
