I'm going to be playing 16's in my first ZAT, and my friend is playing 18's. If we were to play doubles, I know I would have to play the higher ages, and let's say we win it and champ up. Would I have to play 18's Champs Singles or would I be able to play 16's?

Well, first of all, if you win a ZAT of Champs in doubles, all you get is a pat on the back. You cannot move to the next level by winning doubles tournaments. Trust me, I've done it.

If you're partner is in 16 Champs and you're in 16 Zats can you still play doubles with him in champs? What days do they play doubles on?

I do not think ZATs have doubles. You would have to play up a division for doubles, although I believe MZ require both partners to be of Champ level.
