Some tennis players are almost comically overdeveloped on the racquet side of the body and underdeveloped on the other.

What specific exercises do you do to develop the non-dominant side of the body when you're not playing tennis?

weight train with the same amount of weight on both arms/legs/shoulders/etc. agassi trained this way to correct his muscular imbalances on his way to winning the 2001 us open. there is probably a thread about it somewhere that tells you his workout plan
