When I do my poly in the mains and syn gut in the crosses, the gut will make a sort of rainbow shape on each cross. Other than just straightening it with your your fingers is there any way to prevent it?

Straighten it while you tension. This can be done with all types of machines, if you learn how. This will give you a more consistent tension, so should be striven for.

No it isn't. It's not hard at all. Hold it straight with one hand, crank with the other.

then what is holding the string in the gripper

pull until the gripper is tight on the string. it should hold itself.

I started to staighten the crosses on my 2nd string job after I noticed they were crooked on my first.
I was surprised it really made a difference to the tension.
Really easy to straighten them with your left hand while you pull the crank with your right (or visa versa :))
Really getting into this stringing thing !! :)

You can quickly push the string "past straight", up next to the last cross pulled, before pulling any tension. Then pull tension and the string should straighten up.

also, if you pull the crosses all the way down to the previous cross before you pull tension, it will really make a difference in how much it arcs. if your lucky it will even make the crosses perfectly straight when you pull tension.
