The vid is a few months old. nothing much to see here, I am sure all the sane people on this board know that top ranked pros are as talented as you get and they can really hit any shot they like. For them a matter of grip or which backhand will they use, thats just a choice unlike for us, who only know as much as we do. ;)

Personally, I don't think pros are so talented that they can switch to a 2-hander on demand in a match. If such things were easy, why did the teenage Sampras struggle so much to go the other direction? In a real match, Federer would have to match Djokovic or Nadal's 2-hander and that won't be easy.

But it is good to know that he can hit a 2 hander. After his retirement, he will find it easy to coach both 1 and 2 handers, but since most will be 2 handers, it is a necessary skill.

I dont think that he was practicing very seriously and was just messing around. Sometimes when i'm just hitting it's fun to throw in a one hander.

Pros can practice with the shots but in a match situation at the top level it will break down easily. That is why Federer doesn't use it. Besides he hits his one-hander better anyway.
