Do strings dry up? I bought a lot of polyester string and I was wondering if I should do anything to keep it fresh as I will not be using it all in the near future( 1year maybe for it all)

Keep them in a cool dark place and out of direct sunlight.
Also don't string after 12 midnight. ;)

Honestly, poly is the last string type that you need to worry about. It doesn't "go bad" like people make it out to. Once strung, then that's a different story. Just keep it out of light and excessive heat like Lakers said and it will be fine for as long as you have it. Light and heat degradation affects everything in the known world and not just tennis string.

I want to add that the only string you don't want to dry out is Natural Gut. That should be kept in a sealed package and away from extreme heat and cold, until ready to use.
