Is it more likely to break strings due to a larger head size vs smaller head size?

A larger head size means longer tensioned string lengths and thus more stress on the string with each hit.

yes, also string pattern plays a huge role as well. the longer the string the more movement occurs and more stress. For example, it is much easyer to step on a 12ft long 1x4 board and break it than if you steped on a 2ft 1x4.
