It seems defensive tactics (less pace, further from lines) are easier to execute than offensive tactics (more pace, closer to the lines) when a player is nervous.

And, at the 4.0 level at least, I've observed that defensive players have more success in tiebreakers.

Yep. Offensive players need more time to develop accuracy and reduce UEs associated with offensive shots.
