so i was trying out some new grips for my backhand and wanted to learn to use the extreme eastern, but where exactly is the best cinttact point,
id probably guess, Closed Stance, somewhere by your front knee(closest to the net)
can somebody please help with this?

Well, I'd say much more out in front than that like maybe 10 - 12 inches. Really depends on the size of the person (at least to some extent) and some other factors but your waiting too long if your striking the ball at your front knee.

When I used to use an extreme eastern, I found it easier to hit any ball that was hip - chest level.

Exactly. The Extreme Eastern Backhand is the equivalent of a Western grip forehand.
It's best hit out as far in front as possible and any stance will do (as is the case with almost all OHBHs) although you will probably find it easier to hit it with an open stance than you will if you used a less extreme grip.

I play with a Western BH grip.
You will get best results hitting from a closed stance, but you can hit open if you open the face a bit.
The beauty of this grip is that you get natural power from the hand being behind the handle yet you can swing up (getting topspin) as much as you want (because the face is so naturally closed) and the ball will almost never fly long on you.
Note that many/most of the great backhands of the game right now use this grip; Gaudio, Guga, Hennin, ....

Edit in; Forgot the OP original question. I prefer a ball in the knee to waist region. I can hit out with a driving topspin there. In the upper chest area I will hit flat or open the face and hit down hard for a driving slice.

well, grip the racket, assume you're hitting chest high and see what's the required distance from your body in order to have a vertical racket face
