I can't find a USTA or Ultimate Flex league at the 3.0 - 3.5 level here in DFW that starts any time soon. Are these leagues that rare? I really can't see myself playing in any other kind of league. The 1 league I tried at a set time was a disaster and I hated it. Are there any other organizations that have Flex leagues? If not, what are the alternatives for someone like me who doesn't want to have to play at a set time each week?

Check out www.leaguetennis.com . They have flex leagues in your area. It looks like you just missed registering for their summer season, but most leagues will put you on a waiting list and let you sub in if someone drops out due to injury. I suggest you do the same for Ultimate.

I highly recommend UltimateTennis (www.ultimatetennis.com) which is in Dallas. Between them and T2 (a flex doubles league) I don't even bother with USTA anymore.
