Or how to NOT store it...

Bought a set and decided I don't want to use it until who knows when...

Keep it in its original sealed package. If it is already open or to be extra safe, place the gut (including the original package if it is not open) in a Ziploc sandwich bag. Keep it in a cool place--room temperature. Basically, keep it inside your house away from direct sunlight.

If you've opened the package, seal it up with some scotch tape. Keep it in a cool, dry place. Should be fine.

i emailed klip with this same question. the reply that i got led me to
keep it in a ziploc freezer bag. larger than a sandwich bag for less
coil memory. i was using half sets for 16/17 hybrid. i was jackass
enough to also store it in the fridge [i didn't tell the wife] left string
out over night before i strung to allow to gain room temp. i haven't
had any problems yet. klip didn't tell me to store in the fridge, that
    was my own decision.

I've actually heard that putting it in the fridge will increase the longevity of the string. Maybe Marius will chime in; I think it was he who said his stringer pute his rackets strung with gut in the fridge.
