hello, I saw videos of YULITLE's tips on stringing tennis rackets and I noticed that the starting clamp that he uses locks. I was wonding how that mechanism works, if a specific amount of pressure is needed to activate that and if it is a universal feature among all starting clamps

The starting clamp is a just like regular pliers but it works in an opposing direction. The force required is to open them, and then the springs between the grips close it back shut. The "teeth" of the grip are flat and generally string friendly.
