Babolat Leather. Love the feel associated with it. Also, I like feeling the pronounced bevels that it creates.

i like the feel of leather grips but they tear my thumb apart, even with an overgrip.

Ditto. I used Gamma Leather for the last tennis season but I bought Babolat leather and I will NEVER go back.

**** Leather, I really like the feel of it in general, and the Bevel definition in specific.

Mostly whatever's on the racquet. My favorite replacement grip (for quite a while now) is Gamma Hi-Tech. Nice and firm; very durable too.

Lot of people use Babolat Leather here, whats the deal with it? Does it have one particular quality that everyone loves about it or something?

No, but it is the most padded leather grip, and the easiest to install on a racquet with a Head or Dunlop shaped grip (Dunlop in my case). Probably the highest quality too.

It seems juniors like to use synthetics and adults like to use leathers

Me too. This is the sweetness. :-D

Exceptional feel as well as the fact that the bevel definition is crisper.
