Clay shoes and the shank?

Does anyone know the reason clay shoes don't have a visible shank?

More grip.

Shank = Hard plate-like piece under the arch of the foot

Clay court shores outsole is more straight and even than hard court shoes. The reason is that you get more contact surface with the court and prevents clay from building up where the shank is - generally theres kind of a "hole" shape there
