For the life of me I can't figure out why anyone would do a one piece unless you just got used to doing this on wood rackets, when it made sense.

I would not suggest doing a full bed of gut or multi crosses. I think you will prefer the feel of 16g gut and then string at a slightly lower tension with 17g slippery poly in the cross.

I would say either dead/ stiff strings and possibly if you hit big the racket is too light for you. Put weight in the handle, maybe a leather grip and see if that helps too.

I had to play with an 18x20 recently and hated it. Stiff, no feel, nearly impossible to hit a good slice. While specs are similar to my racket I much prefer a radical, prestige, or pro tour.
