I have an easier method. Log everything you eat for a day or two. Then just eat variations of the same thing every day. Sounds dull, but you should be eating the same sorts of things every day - fruits, vegetables, whole grains, all of that isn't going to change. You should be able to get to the point where you have a good estimate of how many calories you have eaten without having to actually count them.
