I'm a one handed backhander. for serve return i wait with eastern 1hbh grip because i assume that i will get more serves to my backhand. i also move appropriately. i know some people choose to wait with eastern forehand.
eastern forehand is my default rally grip. i change it, as appropriate, using the non-dominant hand on the throat during my shoulder turn. i find it is more precise than spinning the racquet and can help with shoulder turn, disguise (slice vs. topspin backhand) and such.
i change to continental grip as i approach the net and for overheads. for serves i use a grip between continental and eastern backhand, but closer to continental.
