How are most of you tracking calories?

I ask because I'm not really sure of how much I eat or the calorie counts of various quantities of food. I think most people do not really know how much they eat in a day. Over time I must be eating the correct amount as my body mostly stays within a 10lb range and I don't need to buy new clothing.
