Anyone have any insight? Weather here absolutely stinks, and I'm getting antsy. Any leagues to join?

You're not going to find anything in the winter months. New Jersey is a terrible state for tennis. I'm getting cabin fever myself, but that is how it is at least in central NJ. There is more population up north so you might have a better chance. I have to settle for my 3 hrs on Tuesday when snow, cold, and wind ruin my plans. Let me know if you find anything decent. Yes, try Bogota Racquet Club, they do leagues twice a week during weekdays, pay I think $25 and play for 2-3 hours mostly dubs. I haven't done it but a friend of mine is going all the time this winter. Washington Twp does it too I think.

There are plenty of leagues in North Jersey, indoors of course, but they usually form in autumn so looking for one in February is not likely to be productive. Weather stinks? You're in the northeast exactly halfway through winter. What did you expect? We play indoors here, and we love it. I mostly play a few miles north of NJ in Rockland County, on Har-Tru (West Rock Tennis) or hard (Matchpoint Tennis).

If you're still looking for a spring/summer league here's a suggestion:
Van Saun Park in Paramus has leagues for a few different levels. http://vansauntenniscenter.blogspot.com/p/leagues.html I can't vouch for the level of play, or the level of professionalism from the management company however. They've changed management more times in the past decade than I can remember from 1 corrupt company to another so they would never get another dime of my money. You're better off finding a local court & a regular game @ one of them. The competition is just as good if not better than the leagues around here & you #1 don't have to pay to play & #2 don't have to make a weekly commitment.
