I think two US Open finals and French final beat all the ones listed:

1981 US Open: Austin def. Navratilova 1-6, 7-6, 7-6
1985 French Open: Evert def. Navratilova 6-3, 6-7, 7-5
1985 US Open: Mandlikova def. Navratilova 7-6, 1-6, 7-6

The two US finals featured nail-biting tiebreaks, and in the 85 French, Evert had only beaten Martina once in 3 years, and after she won the first set, she got tight and lost the second. 9 months earlier in New York, something similar had happened and Martina prevailed in the third. This time, Chris held strong, despite being broken at love when she had a chance to serve for the match in the third.

OH, I didn't see that in the post. Just saw the thread title, which seemed to imply any matches.

If you want to go last 20 years, the ones that stand out for me are:

92 French Final: Seles def. Graf 6-2, 3-6, 10-8
93 Australian Final: Seles def. Graf 4-6, 6-3, 6-2
93 Wimbledon Final: Graf def. Novatna 7-6, 1-6, 6-4
96 French Final: Graf def. Sanchez-Vicario 6-3, 6-7, 10-8
04 US Open: Capriati def. Williams 2-6, 6-4, 6-4 (the bad call match)
05 Wimbledon Final: Williams def. Davenport 4-6, 7-6, 9-7

I think you could also put the 06 Wimbledon final in there, because Mauresmo had such a history of self-destructing and even though she had won the Australian that year, you weren't sure whether winning it because both Clijsters and Henin retired in their semifinal and final matches against her would give her the confidence to win Wimbledon outright.

Graf def. Sabatini 6-4, 3-6, 8-6 (W91)
Gaby missed an easy volley when leading 6-5 30-30 in the third set!
