In both the 2023 ATP Finals semi-final match and this year's Olympic gold medal match, Djokovic played superbly (although still significantly inferior to prime Federer, of course). In my opinion, those two matches were the best ones I've seen from him over the last 4 years.
With that being said, in which match did Djokovic play at a higher level? The scoreline of the 2023 ATP Finals match was much more one-sided, but that's because Alcaraz is far worse on indoor hard courts than he is on clay. At the same time, Djokovic does have a slight match-up advantage against Alcaraz on clay.
 
In my personal opinion, I would say this is a toss-up. To the eye-test, Djokovic seemed to play better in the 2023 ATP Finals, but at the same time, Alcaraz undeniably played at a higher level at this year's Olympics.

From memory, it seemed like Djokovic out-powered Alcaraz throughout the Turin match by being more aggressive and Alcaraz makes errors easier when he tries to play aggressively on fast, indoor courts. At the Olympics, it seemed like the strategy was to put everything into holding serve with aggressive serving and then reserve the super-aggressive FH/returns for the two TBs. Since it is not as easy to hit through Alcaraz on clay and Djokovic was coming off knee surgery, it seemed like he picked the right strategy that he could execute in Paris.
