I just hit 75 at night and was making 60 percent of them serving about 70-85 mph
Clearly I can serve and I have a huge mental block with the sun

Air at night is colder and therefore more dense (~10% more dense, depending on temp swing). Ball travels a little slower and spin "bites" a little more in the denser air. Pros often adjust their racket tension accordingly, ie. Cilic AO 18 final against Fed once he realized the roof was going to be closed.
If you normally miss long, and then at night your serves land in, temp decrease could possibly play a role.

i used to have issues serving outside... IMO it's related to not having any reference points (ie. back drop a blue sky, vs. the relatively low dark/dirty ceiling of an indoor court)during day I am missing 80 percent of serves with little power
