I use the old pallet to measure the length, mark the new pallet and then use my Dremel. I've never used heat to remove a pallet, they've always come off pretty easily, but it wouldn't be a big deal if they broke since I just toss the old pallets anyway. Next I use either Shoo Goo or Rubbing alcohol to completely clean the handle of any old adhesive. Lighter fluid (Naptha) works as well.
I know lots of guys don't do this but I think it's important to have a completely clean handle when putting a new pallet on. I then use 3M spray adhesive to attach the pallets.
