Should my mouth be watering ?
Do i top this with loads of butter ?

Description
Hominy is a food produced from dried maize kernels that have been treated with an alkali, in a process called nixtamalization. "Ley hominy" is a type of hominy made with lye

I made this bizarre combo. Fried chicken, mango/avocado salsa and flatbread. Not very healthy I admit.

Looks good to me !!!

Mushrooms, green peppers, black olives and onions
Fresh spinach, artichokes, mushrooms, garlic, extra virgin olive oil, ricotta & mozzarella cheeses
Salivary glands activated.

I am just having coffee after a breakfast of flatbread with cottage cheese (paneer) and black gram (proteins) and some gouda cheese. Did not have space left for a banana.

Included in my lunch was a vegetable I haven;t had since I was a kid. I think it is called snake-gourd (chichinda). It was quite interestingly prepared.

I'll be making pasta for dinner along with more of this snake-gourd and some potatoes that I will spice up.

I am eagerly awaiting the result of my HBA1C test to see if my sugar has improved. If yes, i am getting icecream for dessert.

Penne pasta & vodka sauce
I made penne pasta for dinner last night. Home made tomato/onion sauce. Green olives, butter, olive oil, cheese, and a sprinkling of herbs (rosemary oregano thyme basil).
It was good.
Side dish of snake-gourd which goes well with this.

Finally had a cup of plain yogurt as dessert.

Isn’t it super bitter? Also called “karela”, or am i thinking of something else
Aah. that is bitter gourd. Karela juice is good for health for something or other.
Karela is another wonderful vegetable that we often mix or stuff with potato.
I usually will have it with rice and daal.

Snake gourd (awful name) is pretty bland.

I had some karela (bitter gourd) for dinner. Had it with some fried potatoes. It was great.
It is an acquired taste. We have it from a young age and get to like the bitter taste.

The worst taste I can recall is the neem leaf. Sometimes for medicinal reasons we boil the leaves and then drink the water. You have to hold your breath to drink it. It is really bad. But supposed to be good for the stomach.

We also fry the leaves in ghee and have it with rice at the start of the meal. That is much nicer. Someone from Orissa once told us this.

Here in Moldova, we also eat fried potatoes, we call them “fries”
