We went Mexican this week(which, considering we live in Ireland, was a lot of work). Needless to say, these are home made:
Tacos on Tuesday and then Enchiladas on Saturday. I tried finishing the Enchiladas on a pan this time for time reasons(with lid on most of the time), using half flour/half corn meal tortillas so they would cook quick, and it worked out amazingly well. I used Greek yoghurt instead of sour cream, onions, Contadina black beans and salsa, simmered chicken in taco spices, enchiladas sauce, Spanish rice from scratch, and loads of spices and cilantro. Growing up in California and Texas paid off here. I often make my own salsa, but just was too squeezed for time to do so this time.

I'll go with; Italian, Turkey, Provolone, Lettuce, Bacon

Bought KFC recently and the chicken was actually tasty and bigger than the last time. Their mashed potatoes are weak, but the gravy is still good. I might just ask for gravy and make my own taters next time. lol
Tonight's dinner: Stuffed Zucchini

Definitely the best frozen fried rice I've had. Unlike so many others, it ACTUALLY tastes like fried rice. I did it in the skillet, not microwave.

What did I last eat? Well, if it's important, I suppose that I can take a moment to tell you.
I just finished one of my four bags of potato chips. That does have consequences...

I'm drifting alone out into the Bay of Bengal, and the only thing that has kept me from drowning under water
is the fact that so far, I have been floating for two miserable days on top of my four puffy bags of chips.
And now, if I can still count correctly, I only have three bags to float on. Uhhh,...what will I eat tomorrow?

^ Had one Tuesday night, did not suck. Only problem was none of my usual grocery stores carry the Hellmann’s Roasted Garlic Sauce anymore, that sh*t rocks on a BLT.

Think I'm gonna hit this up next time since they don't have the one I want.

Had my doubts about that kind of squeeze bottle, but a local burger joint had one of regular mayo on their table the other day, sh*t works rather well.
