Made this tonight, one of the better chicken dishes I’ve had in quite some time. Looks difficult just because there’s a lot of spices, but it’s pretty easy once you have everything. Basmati rice makes the difference.


And it had some peas too.

Just finished off the last of a big batch of beef buorgignon I had made for a dinner party Saturday. Perfect winter comfort food that gets better every day. Served over egg noodles with rustic Italian bread. In my variant I blanched the bacon before frying so the smokiness would not overpower the other flavors. And, like others, I find that a bit of baking chocolate adds to the sauce.

Ojo de Bife, Punta de S (meat cut names) and Alma Negra (a red wine brand of Ernesto Catena, that I strongly recommend).
Note: I will not translate anything because all of this is precious to me, and I don’t want to miss a thing (in translation) as Aerosmith said.

Yep. This is it.

However, i thought one is not supposed to pressure cook with tomatoes, as the tomatoes slow down cooking, or softening.

Usually I've been told to add tomatoes after an item has cooked or softened.

This recipe is closer to what we had. My dad referred to both variations, Saar and toy. No tomatoes, i see.

Made a lamb maqluba yesterday. Always a treat, and I appreciate all the stages. So tasty and festive. My family loves it.
