What to do if server hits a 2nd serve after I think I won the point with a return winner?

In my doubles match I hit what I thought was a return winner off my opponents 1st serve. My return was well in and so I thought I'd won the point and started to walk up to talk to my partner. Then I saw the server hit a 2nd serve almost immediately after they watched my return go by them so I was really unsure of what to do. I thought maybe my partner had called the serve out and I didn't hear it (even though it was a few inches in) so even though I had already started walking up I played the return and ended up losing the point. Afterwards my partner asked what happened and I told him I thought he called it out and he said no that the serving team must have thought the serve was out even though neither of us called it.

What should we have done? What's the rule if the returning team doesn't call the serve out and hits a return winner but the servers think the serve was out?

AFAIK - Its the returning team's call - you could have asked your teammate if he called the serve out. If neither of you did, then you could have notified the serving team that the serve was good and you won the point. But since you accepted his second serve, nothing could be done after that. Others will know more for sure!

So I should have just watched the 2nd serve go by me?

Yeah. If you didn't indicate you were ready they shouldn't have served at you anyway. If your partner has called the first one out the serve while you were unprepared would be a let, since they didn't you could have just kept the point.

If it happens again I would try to loudly say "wait" asap in their service motion, makes it much more clear that you're in the right and hadn't yet indicated readiness.

Yes assuming The Code is being followed.

29. Receiver readiness. The receiver shall play to the reasonable pace of the server. The receiver should make no effort to return a serve when the receiver is not ready. If a player attempts to return a serve (even if it is a “quick” serve), then the receiver (or receiving team) is presumed to be ready.

Like I said earlier I returned it because I thought maybe my partner put his finger up or called out softly and I didn't hear him. If he had called the 1st serve out and I hadn't made a play for the 2nd serve I didn't know there was a rule about readiness and thought I would have lost the point. Fortunately we won the game and the match, but I was curious for next time
