Who is the best candidate for 'mini Djokovic'?

A miniature version (6 foot or under) of Djokovic? Smaller in stature but plays an almost identical game and strokes.

Nishikori comes to mind but his strokes are too compact to be labelled as a mini Djokovic.

Not sure, height-wise.
Accomplishments-wise (while "mini"), stylistically, there are some similarities with Med and Zed.

Both M and Z, like Novak are more known for their backhands than forehands - more balanced from the baseline than, say, Roger or Rafa, let alone Berrettini.

They also (more M than Z) defend well. Not quite as fast/agile as Novak, but at 6'6 with huge wingspans don't have to be. ROS not as great, but they can bomb serves at higher speeds with greater angles.

Diego has a great return game and wonderful strokes, so maybe him, height-wise?

Under 6 ft there's only Schwartzman's that's anywhere near to playing the same type of game as Novak. Nishikori is not that solid imo; his counterpunching can falter where Diego is just rock solid.
Diego can easily withstand heavy pace on both wings and return with interest. He loves playing envelope, and sprinkling in the occasional drops hot and venture to the net. Just as his big brother :)

Davydenko is quicker than Agassi, like Djokovic. Goffin is not as offensive as Davydenko/Djokovic.
Djokovic these days play pretty defensively now. Davydenko/Agassi pure offence. Goffin I feel have just as much offensive mindset as Djokovic but maybe physically weaker to hit hard.

Maybe for the baseline game, but Djokovic doesn't have his variety, touch, tactical brilliance, elegance.
Yeah, i know i know. I just threw him there cause he was 5'9 yet #1 and a God of tennis. He's one of my favorite players.

Nishikori, Chung.

I believe the correct answer is Kim Clijsters - 175, decent server, super returner, great groundstrokes, excellent movement, doing splits regularly... (total opposite when it comes to court demeanor though).
