Who picks the side if you resume a match on a different court?

Let's say you're playing a non-USTA match and you have to stop and resume at a later date for whatever reason (rain, court time expired, etc). When you resume who picks the side? Sometimes the sun can be a huge issue. For example, if you are serving at 4-5 you'd rather start serving on the side without the sun

If you are playing socially, why wouldn’t you just play a new match on a different day instead of continuing the score from a previous match? If a social match does not end for some reason, in my case I would just consider it incomplete and move on to playing other matches.

It's not a social match, it's for a tournament. They have you schedule your own courts and times within a time period. My match got delayed and we resume at a different location
