Do these models differ much in how they are experienced? Sees that spec (except flex) is very similar.

If not, what do you experience as the biggest difference.

Yes. The strike is stiffer with more power, spin, less feel. The blade is softer with less power, I find the 16/19 blade has a slightly unpredictable launch angle, but for most players it will be fine. The blade has less power in general and is softer with more feel.
 
The babolat is better performance wise IMO but it's pretty stiff and you might need to change up your strings etc. The blade has an amazing muted feel and is comfortable though I prefer the 18x20 version.

I do find the Babolat feels more consistent in it’s response. The blade can either crush the ball or tap it over the net.

Gut mains or low tension poly is my jam in the Strike
 
Pure strike 16x19 is definitely my pick over the 16x19 Blade v7. But blade 18x20 v7 is better than both IMO. You could also look at blade v8 16x19, lots of posters have said that it’s a big improvement over the v7 16x19.


People say the Blade is "lower powered" - but how low? How does it compare to Pro Staff 97 v13?
Tbh I don’t find it low powered at all… I guess it depends where you hit it. If you are hitting the sweet spot with the v7 18m it crushes the ball. It’s just not as helpful when it’s outside the sweet spot. When compared to the PS 97 v13, it has a larger sweet spot and IMO has more power due to the higher swing weight. Pro staff is stiffer but because of its small sweet spot it is not the best (power wise). If you really like the Pro Staff feel and crispness, then you could try the 61 100 v13, it has a larger sweet spot and more power than 97 v13y

Can't speak for the v7 but I just played the Blade v8 16x19 last night. Personally I much prefer it over the Pure Strike. For me the Pure Strike, even though the spec is only 1 pt different, felt way too head heavy. I prefer rackets that are more head light. Blade v8 felt much more balanced in comparison
