what am i doing wrong ..

when i've finished all the mains.. and (having plucked all the strings) only the two middle ones are a little lower in pitch, and therefore tension.. ? I'm pretty confident that i do all of them consistently so am i simply forgettting something?

The two middle mains will always have less tension than the rest of the strings; they are the longest.

The pitch of the string should go up as you go to shorter lstrings, pulled at the same reference tension. You should be just fine.

That's not true. The mains have the same tension as the rest of the strings. They're just longer, therefore have a lower resonance frequency.

To the OP: you'll always have SOME variation in string tension between one string and its pair. Don't worry about it.
