I am not in Maui but was therre for part of my honeymoon 7 years ago. If you are looking for a hi, I found a good facility there was the Wailea club. I hit with a pro as a non-member. They even had top notch racquets if you do not want to bring your equipment. I would check with them ahead of time.
Oops! As a follow-up and of greater relevance. Where are you staying? In Kona on the Big Island, the Four Seasons has a great facility and can match up games if you are staying there. They had some strong players 4.0-5.0+ when I was there 7 years ago. I don't know if it is open to non-hotel guests.
