Best format for two hour Tournament

Mixed doubles tournament with 8 teams. We have four courts for 2 hours. My preference would be to be to have regular draw with a playoff for 3rd place as well as a fully played out consolation for 5th and 7th place. Every team should get 3 matches in.
Another format would be for each team to play 4 matches in a "king of the hill" style rotation. Winners moving east to the next court, losers moving west. The tournament champion would be the team winning the 4th (final) match match on the easternmost court.
What format is best for this type of tournament?

Two hours isn't a lot of time regardless of format. You really only have a total of eight court hours to work with?

If you were to play a normal draw with quarters, semis, final, you only have 40 minutes per round which may not even be enough time to play a full normal set.

A common approach with 8 teams is to split them into two groups of four and have them play round-robin and then take the two group winners to a final. But to fit this in, you'd be limited to 30 minutes per match and probably have to do a single Fast Four set for each one.

You could do your preferred format and play the matches like Impact Team Tennis, which usually gets three matches on each court within two hours. Each match is a single set, no-ad scoring, play a tiebreaker at 5-5. Tiebreaker is first to 5, win by 1. For mixed doubles, the serve on a winner-take-all point must go male-to-male or female-to-female. Switch sides only after every four games (or four points in the tiebreaker).

Just like how we coordinate Junior Team Tennis played on four courts:

15 Min Warmup. Then 3 rounds of 35 minute 8-Game pro-sets (or until time runs out). No Ad, Gender to gender deciding points. Tie breaker at 7-7 if it gets that far.

At the 33 min mark, call out "Last game." If it's tied after the last game, play a first to 5 (ITT) tiebreak. Sudden death at 4-4.

Quarters, Semis, Finals.

You can do it JTT style….1 set or 30 mins whichever comes first. Total games won by team determines the outcome of the meet.
