Instinct, Steam 99s, PS 100: would strings matter here?

So I've been demoing racquets lately, and I've come down to a few racquets:

Head Instinct Graphene (beat out the IG instinct): Fxp and sonic pro
Wilson Steam 99S: luxilon 4g
Wilson ProStaff 100: sensation 16 and spin cycle blue (I think)

My demo guy won't let me restring the Wilsons to FXP 16 & sonic pro 16, which is my favorite string combo. What should I do? Will restringing them change anything at all?

Update

UPDATE: I have narrowed my decision down to the graphene instinct and steam 99s. Gotta get that spin for my lefty game :) sayonara ProStaff 100

I love the Wilson Spin Cycle String, it is my favorite but where can you buy the blue? My local shop even has it but he will not sell it and his price includes stringing, so it is $30 or so. Any idea where I can get the color?

Yeah, the graphenes are different from the old models of the speed and instinct, they feel very hollow, the speed lacks power now from its new shape, and the new instinct is a little different, I think it's stiffer, and the balls I hit were much cleaner. I'm not sure about 98 on the speed (could be), but I believe the instinct is 98.

Update

So i tried the new AeroPro Drive today.... not bad, but for some reason, my balls kept on dropping into the net. Why is this? I went to the instinct, and the instinct was hitting nice, bouncy topspin... :-|

Is the new Instinct heavier, or at least does it have a higher swing weight than the current model?

So I saw the new speed, and I compared the old speed to the new speed, ad YES there is a head size difference. The instinct had the SAME head size compared to the old one.

TP - is the new Instinct heavier? currently strung, it is 10.9 oz, 11.2 or so would add stability (stock, no lead tape)

Don't know about the speed models, only saw speed and instinct, but I feel like the new instinct is heavier than the old one.

So after finally making my decision, I've chosen the Head Graphene Instinct MP because:

I already hit with enough spin
I like the maneuverability on the Instinct
I want to "feel" the shots

After hitting once with the Steam 99s, It gave me a slight soreness on my Rotator Cuff (I was trying to really get a swing on the ball)

I owned the Speed IG MP but never really fell in love with it as there were numerous aspects of it I just did not like and as a result parted with it after about 6 months.

Dislikes: beam we too thin, unstable outside the sweet spot, weird head shape, lacking power and adding lead only made it less controllable.

New Speed Graphine MP: I just purchased this racquet after having my BLX Blade 98 stolen at an out of town tournament. I liked the G way better than the IG even before customization. I ended up leading the head and handle to increase both the static and swingweight improving the overall stability and plow although, it is a very good stick even without customization.

Dislikes:Too light without lead
Likes: Beam width, stability, feel, power.

I really liked the weight of the Pro but wanted the 16X19 pattern in the MP.
