I was stringing my friend's Wilson BLX Juice 100 and the cross was recommended by Wilson to be tied off at 11B. It looked like a really strange hole to tie off because there is a grommet hole for a main right next to the tie off hole, making it a really tight fit for a knot. I thought of using another hole but was afraid it might cause stress to the frame so I proceeded as recommended. MAN, it was the most difficult knot I've ever done (though admittedly I''m not the most experienced stringer)! Sooo, I'm wondering if it's ok to go ahead and use other holes for tying off instead of those recommended by the manufacturers?

The knot I used in that video was a Parnell knot. About the same as the Wilson Pro knot but you need to go under the anchor string two times. Really pretty easy to do though. Wat would really be difficult in that situation would be to tie off with a double half hitch - another reason to learn the Parnell or Wilson Pro knot and use them all the time.
I just realised you have two videos on tying off in tight places. However, you mentioned in both videos they were Wilson Pro knots. Am I missing something? Actually, Parnell knot is the only one I know and was the one I used on my friend's Juice BLX. Guess I need to brush up on my knotting skills

The Parnell Knot goes around the anchor string twice, where the Pro Knot goes around only once, and it is a smaller knot than the Parnell.
I use the Parnell for all knots except in tight places like the one you mentioned, then I use the Pro Knot.It works very nice, where you do not need to find an alternative spot to tie.

Here is the last one I did where I used the Parnell knot. It is hard o see because I was using RPM string.

Helpful video but I can't figure out why the racquets are designed with tie-offs in awkward places. A 2 piece string job on my Dunlops require 2 knots in tight places and I have even less room since I'm using floating clamps.

If you string the racket (Wilson or Babolat) one piece there isn't an awkward knot tie off. If you move the tie off farther up the racket you have a longer string on the outside of the racket to tie off and then you get more drawback. Six of one and a half dozen of the other.
