The nsixone 95 is a weird beast... Even more so (it seems) than the previous generations of the 6.1, the middle of the racquet seems pretty "dense", but the peripheral strings are very, very open.
As far as string patterns go, an open pattern just means that the "squares" that the string intersections make are wider/bigger. A dense string pattern means that the squares are smaller. This is a very, very simple explanation, as it's all sort of subjective.
Another definition: Just having more strings in the racquet face. For instance: 18x20 is more dense than a 14x18.
This "rule" doesn't always apply. Many 16x20s can be more "open" than 16x18s, etc. It all depends on the spacing of the strings.
