demo racquets

I noticed that demo racquets usually have old, soft, springy strings. I think it makes some of the racquets that I've playd with a lot worse than if I were to string it with a string of my choice. Also, most demo racquets come in grips considerably smaller than what I'm use to. So, how would I judge a demo racquet and whether or not it would be a good stick for me provided that the grip was bigger and strings fresher and crisper? Would I simply go with the one that feels the best with the demo strings? Or is it likely that the racquet that I dislike with the demo string will play better than the other demo racquets I preferred once it's setup is changed? Right now I have a bunch of Gosen Polylon which I really like in my Ti.Radical OS, but I'm not sure which one of the demo racquets would play best with Polylon. Any feedback?
