how much difference does string make?

I'm demo'ing a racquet that I like alot. The only thing, is that my arm is a little "fatigued" after hitting with it. The demo has some plain jane string in it. And I usually use Prince Premier Multifilament. I've found that I have little to no arm issues with it (on my existing frame).

Will my string make that much of a difference? Or should I pay more attention to why my arm may be tired with the demo?

You really need to string up a demo (if it is on your short list) with your preferred string setup if you are going to dish out serious dollars for a frame or two. The strings and tension are hugely important in the play of the racquet.

Nothing impacts the way a racquet performs more than the type of string and the string tension. The strings, after all, are what make contact with the ball. Two identical racquets strung with different strings and/or different tensions will play differently.

String makes a lot of difference in feel. But I think your arm tiredness is a different factor.
