Why is launching off your left foot important in serving?

I've been taught to launch off my left foot and also land on my left foot when serving. (I'm right-handed.)
I also see all pro players serve that way. (of course, mirror-image for lefties.)

That's not quite right. Modern pros drive with both legs. For a righty, the right foot leaves the ground first so that it appears that the player is launching off the left foot. Modern (righty) servers do land on the left foot, not the right foot. The right leg kicks back and lands much later.

Sorry, I misread the original query. As a result, I did not answer it completely.

Note that top servers are driving up and forward into the court. Because they are jumping forward, the back foot leave the ground first and the front foot leaves the ground shortly afterward.

Notice what happens on overhead smashes when a player needs to jump up & backward. In this situation, the front foot comes off the ground 1st and the player appears to be jumping primarily with the back leg. In this case, a scissor kick is usually employed and the left foot, for a rightly, lands before the right foot.
