This is getting complex. When you say “raw egg,” do you mean “soft-boiled egg”?

And I have never considered reusing pasta water. Are you serious?

This would be for Italian carbonara, not any of that British or American cr@p where you add cream [emoji1]

It's actually a really REALLY easy dish to make. As I said poorly before, there are only three groups of components:

1. The pancetta + garlic (and any oils or butter you choose to add)

2. The pasta + pasta water

3. The cheese (grated Parmesan is easiest) + egg + black pepper

So you fry the garlic (best if you chop into fine pieces or a paste) and fry that with the pancetta.

Just before the pancetta and garlic mix turns brown, you add the cooked pasta directly from the pot with tongs, so that you're basically putting in pasta water with the pasta itself. You practically stir fry it for a very short time and then take it off the heat.

Once off the heat, you put in the Parmesan and egg (raw, yes) and mix it all together. If the sauce clumps up too much, you put in more hot pasta water so the consistency of the sauce becomes more runny and consistent. Add the pepper and then you're done.

The only difficult part here is the egg--if you put in the egg too early or the pan is too hot, you risk cooking the egg, giving you an omelette. The trick is to put it in late enough that you don't fry the egg, yet early enough that the hot pasta water "cooks" it. As for the eggs themselves, you can either put in four raw whole eggs (whisked, of course), or you can use yolk only. Some put in a hybrid of three whole eggs and one yolk. Depending on what you use the taste differs slightly--egg white makes the sauce creamier.

All this sounds rather complicated but I strongly suggest you give it a shot. Once you try it you'll find that it's extraordinarily easy!

Thanks, I do realize that a raw egg (or part thereof) can be dropped into hot water, including noodle water, to produce a tasty egg item. Now how do we tie this concept into the carbonara/pancetta/garlic conversation?

I appreciate your comments. At the same time, all parties to these cooking discussions are keenly aware of the fact that timing is the key factor, apart from ways of chopping the ingredients, perhaps.

In particular, we all know what happens to raw eggs and how quickly, when those are broken into boiling soup or on top of hot dish.

We are focusing on unique insights here.

Was Djokovic really training on clay a month ago? If so, why? Is game isn't exactly lacking on the surface. He got unlucky last year, running into a white-hot Stan on Stan's admitted favourite surface. I mean did you see what Stan did to Roger in the quarters? Lol. He left him (Roger) sprawled across the ground at one point. Looooool. Roger was so perturbed that he went to sit down after the first game. The first game! I knew then that Stan was probably going to win that match.

Nadal - Nishikori almost upon us.
Alas, Nadal - Nishikori it is. Nadal is definitely playing better than last year, but I think he was doing too many mistakes today against Kohli.

If he wins convincingly without dropping a set against Nishi tomorrow it will give him some more confidence.

Then, all I hope is the tennis gods put Nadal and Djokovic in separate halves at the French Open.
